Description
Domaine de Chevalier is located in Pessac-Leognan, which is located in the north of the Graves district. It became its own AOC in 1987. Domaine de Chevalier was rated as a Grand Cru Classé de Graves in 1953 during the Classification of the Graves. The Graves regional classification was used to rate red wine and white wine separately. Domaine de Chevalier rated both red wine and white wine. Only 14 wineries have achieved the Grands Crus Classés rating at the same time.

The winery has a long history, documented in the 17th century, with detailed records in 1865. Jean Ricard began planting grapes, and he is regarded as the founder of the estate. Later, his son-in-law Gabriel Beaumartin managed the estate for 40 years until 1983. In 2006, the Bernard Family acquired the manor. During this period, the manor had only three owners. The current owner is Olivier Bernard.

In the winemaking philosophy of Cavalier Winery, the mission of the brewing process is to faithfully reflect the characteristics of the terroir. The winery respects the differences between each vintage and adapts its vineyard and cellar management practices accordingly. The winery is equipped with small fermentation tanks to brew the fruits produced in different plots separately. For red wine, cold maceration is usually carried out for 4-6 days before fermentation to obtain a more fruity aroma. An artificial pressure cap is used during the fermentation process to make the extraction process gentler. The first wine will be aged 14-24 months in oak barrels with a proportion of 40% -60 % new barrels. When making white wine, the fruit is picked and transferred to a bladder press where it is gently pressed separately by the plot. After the fermentation is completed, the wine will be aged on the lees to make the wine fuller and richer, with a smoother texture and a more complex structure.
