Description
Almaviva Winery is located in the Maipo Valley wine region of Chile. It was established in 1997 in cooperation with the French Château Mouton Rothschild and the famous Chilean Concha y Toro.
"Almaviva" means "living soul". Literally, "alma" means "soul, life" in Spanish, so it is not difficult to understand when it is translated into "living soul". How did Living Soul Winery get its name? It is said that Chile has a unique climate, water and soil, and is a paradise for wine making. However, the wine produced cannot get rid of the "cheap" label. Concha Concha Winery is determined to break this strange theory. They clearly realize that there is no problem with the quality of Chilean wine, but what is missing is the finishing touch. Therefore, Concha Winery invited Baron Philippe de Rothschild, the unique "soul figure" in the red wine world, to come to Chile to jointly make world-famous wine. The two parties quickly reached an agreement and created Living Soul Wine. village.

The vineyard of Living Soul Winery is located at a higher altitude in the Maipo Valley, covering an area of ​​60 hectares. The grape varieties grown in the garden include Cabernet Sauvignon, Carmenere, Cabernet Franc, Merlot and Petit Verdot, with Cabernet Sauvignon leading the way. In terms of climate, because the altitude is as high as 650 meters and the vineyards are affected by the Andes Cordillera, the climate here is very cool with a large temperature difference between day and night, which prolongs the growth period of the grapes and is conducive to the accumulation of sugar and flavor substances. The soil in the garden is relatively poor and has various soil types, including loamy clay, sandy loam, gravel and rock. The soil is well-drained and rich in minerals, giving the wine a balanced and elegant style.

The winery uses manual methods to harvest and select the grapes, and then carries out the process of removing the stems and breaking the skins. The winery will soak the skins to obtain more color and flavor. The alcoholic fermentation process is completed in stainless steel tanks. The winery also places the grape skins and grape seeds in a basket press for gentle pressing, adding flavor to the finished wine. After fermentation, the wine will be placed in new French oak barrels for maturation. The maturation time is about 16-18 months. Egg whites are used for clarification before bottling.
