Description

This is a red wine from South Australia, Australia, inspired by Bin 707. 1990 is the first vintage of Bin 407. It is made with Cabernet Sauvignon from different production areas and vineyards, and uses old and new French Aged in American oak barrels. A vivid deep red wine with aromas of black currant, chutney, yellow plums and persimmons, with hints of olive leaf and turmeric spice, this wine is medium-bodied and well-structured with mocha, chocolate and Walnut flavour, fine tannins and a long finish.

Bin 407 offers varietal definition and approachability yet with structure and depth of flavour. Delivering traditional cabernet flavours immediately, expect tomato relish or chutney alongside blackcurrant and plum fruits and mocha/chocolate/walnut flavours with fine, rounded and polished tannins.

South Australia’s cooler cabernet regions rise to the fore in the warmer, dryer seasons, and the varietal precision of this release is something to behold. Crunchy blackcurrants, cassis and violets of pristine purity are consummately framed in cedary oak (mostly French). This is a Bin 407 of exacting engineering, in which deep black fruits, firm, fine tannins and bright acid drive embrace on a finish of impressive carry and endurance.’
